Sugar-Free Brazilian Coconut cake

On one of our other websites, the Norwegian site for Café Pelé, we have published a recipe for how to make sugar-free condensed milk and a delicious sugar-free Brazilian coconut cake.

Condensed milk bought by the store often contains 50% sugar, but with JustSweet, and the recipe that is published, you can make condensed milk, which is at least as good as you buy in the store, with dry milk and JustSweet.

The recipe shows how to save 800 kcal in one cake.

In Brazil people, like everywhere else, like sweet cakes. Very sweet cakes and sugar consumption may be high for some, but now someone has figured out that JustSweet™, developed by sorze4 AS (sold by JustSweet AS (Inc)), in Trondheim, is natural, tastes like sugar and is almost without calories.

Condensed milk that you buy in a box at the store usually contains more than 50 g of sugar per 100 g of product (200 kcal), so you can cut a lot if you make it yourself. For this purpose, you may use dry milk. Dry milk do also contain calories, 500 kcal / 100 g, but not from plain Sugar.

Make your own condensed milk, without sugar
  • ½ cup hot water (1.25 dl)
  • In the regular, common recipe, there are 1 cup (2.5 dl – 210 g) sugar, but this is replaced with ½-1 tablespoon JustSweet ™ (about 2.2-4.5 g with 2 kcal per gram). As 210 grams of sugar contains 840 kcal, you save 830+ kcal.
  • 1 cup (2.5 dl) dried milk from whole milk (105 kcal)

The ingredients should be whipped together and put the condensed milk in the refrigerator overnight. You now have home-made condensed milk (3.75 dl – 250 g), approx. 115 kcal. 46 kcal per 100 g.

Cake
  • 4 eggs
  • 1-2 tablespoons JustSweet™ – The natural prebiotic sweetener JustSweet is 25-50 times sweeter than sugar. Has a synergistic effect for ingredients that are mixed will be sweeter than they really are, so if you do not like it very sweet, then you should try with 1 spoon and taste. If you do not have JustSweet™ then it will be about 100-200 g of sugar that will be needed to replace it.
  • 1 cup vegetable cooking oil (not olive, but preferably coconut oil).
  • 3 cups flour (7.5 dl)
  • 1 cup of milk (2,5 dl)
  • 1 spoon baking powder.

By replacing 200 g of sugar, you have saved approx. 800 kcal.

Mix eggs and sweets with a whisk. If you use sugar, use a mixer. After this is well mixed, put in the rest of the ingredients (baking powder in the end). Then fill this in a finished greased cake form and put it in the oven at 180 ° C – Check with a knitting needle or fork to see when it is finished.

To make the cake more juicy
  • ½ cup (1.25 dl) of the condensed milk (made one day in advance).
  • 1 cup (2.5 dl) of milk. (here, orange juice, instead of milk, gives an interesting taste experience)
  • ¼ cup (0.6 dl) coconut milk
Coconut Cream
  • 200 g of condensed milk (the one you made the day before)
  • 150 g grated coconut without sugar
  • 150 g of coconut milk
  • 2.5-3 dl cream

Heat in a saucepan until it becomes like a thick porridge / cream.

When the cream is cooled:

  • Divide the cake.
  • The parts moistened with what was described as; “to make the cake more juicy” (see above).
  • Use coconut cream in between the pieces and then on top of the cake.
  • Sprinkle with grated coconut.
  • Put in the refrigerator for cooling.
